- 1In a saucepan over medium heat, simmer 1 1/2 cups apple cider until reduced to 3/4 cup (about 10-15 min). Cool completely.
- 2Preheat oven to 350°F (175°C). Grease and flour a 10-cup bundt pan.
- 3In a medium bowl, whisk together 2 cups flour, 1 1/2 tsp baking powder, 1/2 tsp baking soda, 1 tsp cinnamon, 1/4 tsp nutmeg, 1/4 tsp allspice, and 1/2 tsp salt.
- 4In a large bowl, whisk together 1/2 cup melted butter, 1/2 cup brown sugar, 1/2 cup granulated sugar, 2 eggs, 1/2 cup Greek yogurt or sour cream, 1 tsp vanilla, and cooled reduced apple cider.
- 5Add dry ingredients to wet and fold together just until combined.
- 6Pour batter into prepared bundt pan. Bake for 35-40 minutes, or until a toothpick comes out clean.
- 7Cool cake in the pan for 15 minutes, then invert onto a rack.
- 8Brush warm cake with 1/4 cup melted butter. Mix 1/3 cup sugar and 1 tsp cinnamon, then sprinkle over cake, pressing gently to adhere.
