- 1Preheat the oven to 375°F (190°C) and brush a muffin tin lightly with melted butter.
- 2In a bowl, combine diced apples, lemon juice, brown sugar, cinnamon, flour, vanilla, and salt. Toss until well mixed.
- 3Lay one phyllo sheet on a clean surface, brush with melted butter. Layer with two more sheets, brushing each. Cut stack into 6 squares.
- 4Gently press each square into a muffin cup, creating little cups. Repeat with the next 3 sheets of phyllo to make 12 cups.
- 5Spoon apple filling evenly into each phyllo cup.
- 6Bake for 18-22 minutes, until phyllo is golden and crisp and apples are tender.
- 7Cool for 5 minutes, then lift out carefully. Dust with powdered sugar before serving if desired.
