    Separate and wash lettuce leaves. Pat them dry and set aside.

    Prepare all veggies—dice onion, chop mushrooms and water chestnuts, grate carrot, mince garlic and ginger.

    Heat oil in a large skillet over medium-high. Sauté onion, garlic, and ginger for 1-2 minutes until fragrant.

    Add mushrooms and carrot. Cook for 2-3 minutes until softened.

    Stir in ground chicken. Cook for 4-5 minutes, breaking it up, until no longer pink.

    Pour in hoisin sauce, soy sauce, rice vinegar, sesame oil, and Sriracha. Add water chestnuts. Stir and cook for 2-3 more minutes so flavors meld.

    Remove from heat. Fold in green onions and cilantro.

    Serve chicken filling in lettuce leaves. Garnish with sesame seeds, chopped peanuts, and fresh lime if desired.
