- 1Separate and wash lettuce leaves. Pat them dry and set aside.
- 2Prepare all veggies—dice onion, chop mushrooms and water chestnuts, grate carrot, mince garlic and ginger.
- 3Heat oil in a large skillet over medium-high. Sauté onion, garlic, and ginger for 1-2 minutes until fragrant.
- 4Add mushrooms and carrot. Cook for 2-3 minutes until softened.
- 5Stir in ground chicken. Cook for 4-5 minutes, breaking it up, until no longer pink.
- 6Pour in hoisin sauce, soy sauce, rice vinegar, sesame oil, and Sriracha. Add water chestnuts. Stir and cook for 2-3 more minutes so flavors meld.
- 7Remove from heat. Fold in green onions and cilantro.
- 8Serve chicken filling in lettuce leaves. Garnish with sesame seeds, chopped peanuts, and fresh lime if desired.
