    Pour apple cider into a small saucepan and simmer until reduced to 1/2 cup (about 10-12 minutes). Set aside to cool.

    Preheat oven to 350°F (175°C) and grease a 6-cavity donut pan.

    In a large bowl, whisk flour, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.

    In a medium bowl, whisk eggs, melted butter, milk, vanilla, and cooled apple cider reduction.

    Add wet ingredients to the dry ingredients and mix until just combined—do not overmix.

    Spoon or pipe batter into the donut pan, filling each cavity about 3/4 full.

    Bake for 12-14 minutes, until donuts are puffed and a toothpick comes out clean.

    Cool donuts in the pan for 5 minutes, then turn out onto a wire rack.
