- 1Pour apple cider into a small saucepan and simmer until reduced to 1/2 cup (about 10-12 minutes). Set aside to cool.
- 2Preheat oven to 350°F (175°C) and grease a 6-cavity donut pan.
- 3In a large bowl, whisk flour, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
- 4In a medium bowl, whisk eggs, melted butter, milk, vanilla, and cooled apple cider reduction.
- 5Add wet ingredients to the dry ingredients and mix until just combined—do not overmix.
- 6Spoon or pipe batter into the donut pan, filling each cavity about 3/4 full.
- 7Bake for 12-14 minutes, until donuts are puffed and a toothpick comes out clean.
- 8Cool donuts in the pan for 5 minutes, then turn out onto a wire rack.
- 9Brush each donut with melted butter while still warm. Toss in cinnamon sugar until fully coated. Enjoy!
