- 1Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish with nonstick spray.
- 2In a large skillet over medium heat, cook the sausage, breaking it up as it browns, for 6-8 minutes. Drain on paper towels.
- 3Whisk eggs, milk, salt, and pepper in a bowl. Pour into skillet and scramble over medium-low heat until just set, 3-4 minutes.
- 4Lay out the tortillas. Evenly distribute cooked sausage, scrambled eggs, 1 cup cheese, and some green onions down the center of each.
- 5Roll tortillas up and arrange them seam-side down in the prepared baking dish.
- 6In a bowl, mix salsa verde and sour cream until smooth. Pour over enchiladas.
- 7Sprinkle remaining cheese on top. Cover with foil and bake for 20 minutes. Uncover and bake 10-15 more minutes, until bubbly and golden.
