- 1Preheat oven to 375°F (190°C) and grease a 9x13-inch casserole dish.
- 2In a large skillet, heat olive oil over medium-high heat. Add chicken, fajita seasoning, garlic powder, salt, and pepper. Cook 4-5 minutes.
- 3Add sliced bell peppers and onion to skillet. Sauté 3-4 minutes more, until just tender.
- 4Spread cooked rice in the casserole dish. Top evenly with chicken and veggie mixture.
- 5Scatter drained diced tomatoes over the casserole.
- 6In a small bowl, combine sour cream with half the cheddar cheese. Dollop and spread over casserole.
- 7Sprinkle Monterey Jack and remaining cheddar cheese evenly on top.
- 8Bake uncovered for 20-25 minutes, until cheese is melted and casserole is bubbly.
- 9Rest 5 minutes before serving. Garnish with cilantro if desired.
