    Preheat oven to 375°F (190°C) and grease a 9x13-inch casserole dish.

    In a large skillet, heat olive oil over medium-high heat. Add chicken, fajita seasoning, garlic powder, salt, and pepper. Cook 4-5 minutes.

    Add sliced bell peppers and onion to skillet. Sauté 3-4 minutes more, until just tender.

    Spread cooked rice in the casserole dish. Top evenly with chicken and veggie mixture.

    Scatter drained diced tomatoes over the casserole.

    In a small bowl, combine sour cream with half the cheddar cheese. Dollop and spread over casserole.
