- 1Cook penne pasta in a large pot of salted boiling water until al dente. Reserve 1/2 cup pasta water, then drain and set aside.
- 2In a large skillet, cook chopped bacon over medium heat until crispy, about 6-8 minutes. Remove bacon and drain on paper towels. Leave 1 tablespoon bacon drippings in the skillet.
- 3Season chicken with salt and pepper. Add olive oil to the skillet if needed, then add chicken and cook over medium-high heat until golden and cooked through, about 5-6 minutes. Stir in minced garlic and cook for 1 minute.
- 4Add ranch seasoning, cream cheese, milk, and chicken broth to the skillet. Stir constantly until the cream cheese melts and the sauce becomes smooth.
- 5Add drained pasta, cooked bacon (reserve some for garnish), mozzarella, and Parmesan. Toss to combine, adding a splash of reserved pasta water if needed. Adjust seasoning to taste.
- 6Serve pasta hot, garnished with remaining bacon and chopped parsley.
