- 2Prepare three bowls: one with flour, one with beaten eggs and milk, one with a mix of panko, Parmesan, garlic powder, Italian seasoning, salt, and pepper.
- 3Dredge each chicken piece in flour, dip in egg mixture, then coat in panko mixture, pressing crumbs to adhere.
- 4Heat olive oil in a large skillet over medium heat. Fry chicken 3-4 minutes per side, until golden and cooked through. Drain on paper towels.
- 5Butter sandwich rolls and broil, cut side up, for 1-2 minutes until golden.
