- 1Preheat your oven to 425°F (220°C).
- 2Pat chicken thighs dry and place in a bowl. Drizzle olive oil over the chicken, then add garlic, thyme, rosemary, salt, and pepper. Rub seasoning all over each thigh.
- 3Scatter onion slices in the base of a large ovenproof skillet or baking dish. Place the chicken thighs skin side up on top of the onions, then tuck lemon slices around the chicken. Pour chicken broth around the thighs.
- 4Bake uncovered for 35 minutes, or until the skin is crispy and deep golden brown and the internal temperature is 175°F (80°C). For crispier skin, broil for 2-3 minutes at the end.
- 5Remove from oven and let rest for 5 minutes before serving. Spoon pan juices over each portion.
