Christmas Cookie Sparkles

   Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.

   In a large bowl, cream together the softened butter and sugar until fluffy (2-3 minutes).

   Beat in the egg and vanilla extract until well combined.

   In a separate bowl, whisk together flour, baking soda, and salt.

   Gradually add the dry ingredients to the wet mixture, mixing until a smooth dough forms.

   Scoop out 1 tablespoon of dough at a time, roll into balls, then coat each ball in holiday sprinkles.

   Place balls 2 inches apart on prepared baking sheets.

   Bake for 9-11 minutes, until just set on the edges. Cool on baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
