    In a large pot, heat olive oil over medium heat. Add onion, carrots, celery, and bell pepper. Sauté for 5 minutes until softened. Stir in garlic and cook for 1 minute.

    Add diced tomatoes (with juice) and vegetable broth. Stir in Italian seasoning, oregano, crushed red pepper (if using), salt, and pepper. Bring to a boil.
