- 1Preheat oven to 350°F (175°C). Grease a 9-inch cake pan or line with parchment paper.
- 2In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
- 3In a large bowl, beat butter and brown sugar with an electric mixer until light and fluffy.
- 4Add eggs, one at a time, mixing well after each. Stir in vanilla extract.
- 5Mix in yogurt (or sour cream) until smooth.
- 6Add the dry ingredients to the wet ingredients and mix until just combined.
- 7Gently fold in the diced apples with a spatula.
- 8In a small bowl, combine granulated sugar and cinnamon for the topping.
- 9Spread half the batter into the prepared pan. Sprinkle with half the cinnamon-sugar mixture. Add the remaining batter and sprinkle the rest of the cinnamon-sugar on top. Swirl gently, if desired.
- 10Bake for 38–42 minutes, or until a toothpick inserted in the center comes out mostly clean.
- 11Cool in the pan for 10–15 minutes, then transfer to a wire rack. Slice and serve warm or at room temperature.
