Cream of Mushroom Pork Chops are a comforting classic. Juicy pork chops simmer in a creamy, savory mushroom sauce for an easy, family-friendly meal.

    Pat pork chops dry and season with salt and pepper on both sides.

    Heat olive oil in a large skillet over medium-high heat. Sear pork chops for 3 minutes per side until browned. Remove and set aside.

    Add diced onion to skillet and sauté for 2 minutes. Add mushrooms and cook until browned and tender, about 5 minutes. Stir in garlic and cook for 1 minute.

    Pour in cream of mushroom soup, chicken broth, and thyme. Stir until well blended, scraping up any browned bits.

    Return pork chops (plus any juices) to the skillet. Reduce heat to low, cover, and simmer for 10-12 minutes until pork chops reach 145°F. Spoon sauce over chops occasionally.

    Uncover and simmer an extra 2 minutes if you like a thicker sauce. Taste and season with extra salt and pepper if needed. Sprinkle with parsley and serve hot.
