- 1Place peeled, chunked potatoes in a large pot and cover with cold water. Add a generous pinch of salt.
- 2Bring to a boil, then reduce to a simmer and cook for 15-20 minutes, until potatoes are fork-tender.
- 3While potatoes cook, warm heavy cream and butter in a small saucepan over low heat until butter melts.
- 4Drain potatoes well and return to the pot. Allow to steam dry for 1-2 minutes.
- 5Mash potatoes until smooth, then add Boursin cheese, warm cream-butter mixture, salt, and pepper.
- 6Stir or mash until fully combined and ultra-creamy. Taste and adjust seasoning.
