    Place peeled, chunked potatoes in a large pot and cover with cold water. Add a generous pinch of salt.

    Bring to a boil, then reduce to a simmer and cook for 15-20 minutes, until potatoes are fork-tender.

    While potatoes cook, warm heavy cream and butter in a small saucepan over low heat until butter melts.
