- 1Bring a large pot of salted water to a boil. Cook fettuccine until al dente; reserve ½ cup pasta water, then drain and set aside.
- 2In a large skillet over medium heat, melt butter. Add onion and cook 3-4 minutes until softened. Stir in garlic, cooking 1 minute more.
- 3Add pumpkin puree, Cajun seasoning, and smoked paprika (if using). Stir well and cook 2 minutes.
- 4Pour in heavy cream and vegetable broth. Stir to combine and bring to a gentle simmer.
