    Melt butter in a large pot over medium heat. Add onion and cook until softened, about 4–5 minutes. Add garlic and cook 1 minute more.

    Add potatoes, broth, salt, pepper, and thyme. Bring to a simmer. Reduce heat and cook uncovered for 15–20 minutes, until potatoes are very tender.

    Remove about 2 cups of the soup to a bowl. Use an immersion blender to puree the remaining soup in the pot to your desired smoothness. Return reserved chunky soup to the pot and stir.
