- 1Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add sausage, break up with a spatula, and brown for 5-6 minutes. Transfer sausage to a plate.
- 2Add diced onion to the skillet. Sauté for 3 minutes until softened, then add minced garlic, Italian seasoning, and red pepper flakes. Cook for 1 minute more.
- 3Return browned sausage to the pan. Add chicken broth, crushed tomatoes, and rigatoni. Stir well and bring to a simmer. Cook uncovered, stirring occasionally, for 12-14 minutes or until pasta is tender.
- 4Lower heat. Stir in heavy cream and Parmesan cheese. Simmer gently for 2-3 minutes, until sauce thickens and is creamy. Season to taste with salt and pepper.
