    Pat chicken wings dry with paper towels, season with 1/2 teaspoon salt and 1/2 teaspoon pepper, and set aside.

    Heat 2–3 inches of vegetable oil in a heavy pot or deep fryer to 350°F (175°C).

    In a large bowl, whisk together flour, cornstarch, baking powder, remaining salt, pepper, paprika, garlic powder, and cayenne (if using).

    In another bowl, whisk buttermilk and eggs until well combined, then pour into the dry ingredients and mix until a thick, smooth batter forms.

    Dip each wing into the batter so it is well coated. Let the excess drip off. Carefully place wings into the hot oil in batches without crowding.

    Fry wings for 8–10 minutes, flipping occasionally, until deeply golden and crispy. Check doneness with a meat thermometer (165°F internal temp).
