- 1In a large bowl, combine buttermilk, 1 teaspoon salt, and 1/2 teaspoon pepper. Add chicken and marinate in the fridge for at least 30 minutes (or up to 8 hours).
- 2Preheat oven to 425°F (220°C). Line a baking sheet with foil or parchment and set a wire rack on top. Spray rack with nonstick spray.
- 3Set up three shallow dishes: one with flour, one with panko, paprika, garlic powder, onion powder, cayenne, remaining salt and pepper mixed together, and one empty for breaded chicken.
- 4Remove one piece of chicken at a time from the marinade, allowing excess to drip off. Dredge in flour, dip again in the buttermilk, then coat generously with the panko mixture, pressing to adhere.
- 5Arrange breaded chicken on the prepared rack. Spray the tops and sides with olive oil or nonstick spray.
- 6Bake for 35-40 minutes, or until golden brown, crisp, and the internal temperature reaches 165°F (74°C). Let rest a few minutes before serving.
