    Press tofu for 10-15 minutes, then cut into 1-inch cubes.

    Toss tofu cubes in 1/4 cup cornstarch until fully coated.

    Pan-fry tofu in 2 tablespoons neutral oil over medium heat for 8-10 minutes, turning until golden and crisp on all sides. Set aside.

    In a small bowl, whisk together soy sauce, maple syrup, rice vinegar, sesame oil, 2 tablespoons water, and cornstarch slurry (1 tablespoon cornstarch + 2 tablespoons water).

    Wipe excess oil from the skillet. Sauté garlic and ginger over medium-low heat for 30 seconds until fragrant.

    Add the sauce mixture to the skillet; cook, stirring constantly, until thickened and glossy, 1-2 minutes.

    Return fried tofu to skillet and toss to coat in the sticky sauce. Sprinkle with red pepper flakes if desired.
