- 1Brown the ground beef in a skillet over medium heat, crumbling as it cooks, until no longer pink (about 5-7 minutes). Drain excess fat.
- 2Add diced onion and minced garlic to the skillet. Sauté for 2-3 minutes until fragrant and onions soften. Transfer the mixture to your Crock Pot.
- 3Add potatoes, carrots, celery, green beans, corn, peas, diced tomatoes (with juice), tomato paste, Worcestershire sauce, Italian seasoning, bay leaf, salt, and pepper to the Crock Pot.
- 4Pour in the beef broth. Stir to combine all ingredients.
- 5Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours, until vegetables are tender and flavors meld.
- 6Remove bay leaf. Taste and adjust salt and pepper if needed. Ladle into bowls, top with fresh parsley, and serve!
