- 1Preheat your oven to 375°F (190°C).
- 2If using regular noodles, cook them al dente according to package directions, then drain and lay flat on a towel.
- 3In a large skillet, heat olive oil over medium heat. Brown ground beef, breaking apart, until no longer pink. Add onion, cook until soft. Stir in garlic, cook 1 minute. Season with half the salt and pepper. Drain excess fat.
- 4Add fresh spinach to the beef mixture and cook until wilted, 1–2 minutes. (If using frozen, thaw and squeeze dry, then stir in.) Remove from heat.
- 5In a bowl, mix cottage cheese, egg, oregano, basil, and remaining salt and pepper until combined.
- 6Spread 1/2 cup marinara sauce into the bottom of a 9x13-inch baking dish. Layer noodles, half the beef-spinach, half the cottage cheese mixture, and 3/4 cup mozzarella.
- 7Repeat the layering: noodles, remaining beef-spinach, remaining cottage cheese mixture, and 3/4 cup mozzarella.
- 8Top with final layer of noodles, the rest of the sauce, remaining mozzarella, and all of the Parmesan.
- 9Cover with sprayed foil and bake 25 minutes. Remove foil and bake 20–25 minutes more, until hot and cheese is golden. Let rest 10–15 minutes before slicing.
