    Preheat your oven to 375°F (190°C).

    If using regular noodles, cook them al dente according to package directions, then drain and lay flat on a towel.

    In a large skillet, heat olive oil over medium heat. Brown ground beef, breaking apart, until no longer pink. Add onion, cook until soft. Stir in garlic, cook 1 minute. Season with half the salt and pepper. Drain excess fat.

    Add fresh spinach to the beef mixture and cook until wilted, 1–2 minutes. (If using frozen, thaw and squeeze dry, then stir in.) Remove from heat.

    In a bowl, mix cottage cheese, egg, oregano, basil, and remaining salt and pepper until combined.

    Spread 1/2 cup marinara sauce into the bottom of a 9x13-inch baking dish. Layer noodles, half the beef-spinach, half the cottage cheese mixture, and 3/4 cup mozzarella.

    Repeat the layering: noodles, remaining beef-spinach, remaining cottage cheese mixture, and 3/4 cup mozzarella.

    Top with final layer of noodles, the rest of the sauce, remaining mozzarella, and all of the Parmesan.

    Cover with sprayed foil and bake 25 minutes. Remove foil and bake 20–25 minutes more, until hot and cheese is golden. Let rest 10–15 minutes before slicing.
