Instructions
- 1Bring a large pot of salted water to a boil. Cook fettuccine according to package directions until al dente. Reserve 1/2 cup pasta water and drain.
- 2Meanwhile, pat shrimp dry and toss with 1 tablespoon Cajun seasoning.
- 3Heat olive oil in a large skillet over medium-high. Add shrimp in a single layer and cook 1-2 minutes per side, until just opaque. Remove to a plate.
- 4In the same skillet, melt butter over medium heat. Add minced garlic and sauté 30 seconds.
- 5Add chicken broth, scraping up browned bits. Pour in heavy cream, Parmesan, remaining Cajun seasoning, and season with salt and pepper. Simmer 2-3 minutes, stirring.
- 6Add drained pasta and cooked shrimp to the sauce. Toss to coat, using reserved pasta water to thin if needed. Stir in lemon juice.
- 7Serve hot, garnished with parsley and extra Parmesan. Add lemon wedges on the side.
