- 1Preheat oven to 375ºF (190ºC). Prepare pie crust in a 9-inch pie plate if using, or grease baking dish for crustless.
- 2In a skillet, cook chopped bacon over medium heat until crispy, about 5-7 minutes. Transfer to paper towels.
- 3Add onion and mushrooms to same skillet. Cook until mushrooms are caramelized and moisture evaporates, about 6-8 minutes. Stir in spinach for 1 minute until wilted. Remove from heat.
- 4In a bowl, whisk together egg whites, milk, garlic powder, thyme, salt, and pepper.
- 5Stir in cooked veggies, half the cheese, and most of the bacon to the egg mixture.
- 6Pour mixture into prepared dish. Top with remaining cheese and bacon.
- 7Bake for 28-32 minutes, or until set in the center and lightly golden.
- 8Cool for 10 minutes, then slice and serve.
