    In a large skillet, heat olive oil over medium-high. Add cubed chicken, diced onion, smoked paprika, thyme, salt, and pepper. Cook for 4-5 minutes, stirring occasionally.

    Stir in minced garlic and cook another minute, then reduce heat to low.

    Add cream cheese, Greek yogurt, and half the shredded cheddar to the skillet. Stir until cheeses melt and the sauce is creamy.
