- 1Preheat oven to 400°F (200°C) and grease or line a baking sheet.
- 2In a shallow bowl, mix breadcrumbs, Parmesan, garlic, parsley, Italian seasoning, paprika, salt, and pepper.
- 3In another bowl, whisk eggs.
- 4Pat pork chops dry. Dip each chop in egg, then press into breadcrumb-Parmesan mixture until fully coated.
- 5Arrange pork chops on the baking sheet and drizzle tops with a little olive oil.
- 6Bake for 22-26 minutes, flipping once halfway, until chops are golden and reach 145°F inside.
- 7Rest 3-5 minutes, garnish with parsley, and serve hot!
