    Heat 1/2 tablespoon sesame oil in a large skillet over medium-high heat. Add ground turkey, break it up, and cook 4-5 minutes until browned.

    Push turkey to one side. Add remaining oil, then sauté garlic, ginger, and green onions for 1 minute until fragrant.

    Add coleslaw mix. Stir everything together and cook for 4-5 minutes until veggies just soften.

    Make a well in the center; pour in beaten eggs. Let them set for 30 seconds, then scramble and stir into the mixture.

    Add soy sauce, rice vinegar, hoisin sauce, and sriracha. Stir well to coat. Cook 2-3 more minutes.
