- 1In a large bowl, mix ground beef, panko breadcrumbs, eggs, milk, half of the minced garlic, salt, and black pepper until just combined.
- 2Form the mixture into 1 1/2-inch balls (about 2 tablespoons each) and place them in a single, even layer in the bottom of your crockpot.
- 3In a medium bowl, whisk together honey, soy sauce, ketchup, remaining garlic, and a pinch of freshly ground black pepper.
- 4Pour the sauce evenly over the meatballs.
- 5Cover and cook on LOW for 3 hours, or until the meatballs are cooked through and the sauce is bubbling.
- 6Mix the cornstarch and water in a small bowl, then stir the slurry into the crockpot. Switch to HIGH and cook for 10-15 minutes more, until the sauce thickens to a glossy glaze.
- 7Gently toss meatballs in the sauce, then garnish with parsley and green onions if desired. Serve warm!
