    Preheat your oven to 400°F (200°C).

    In a medium bowl, whisk together Dijon mustard, honey, whole-grain mustard, olive oil, apple cider vinegar, garlic, salt, pepper, and smoked paprika.

    Pat chicken thighs dry and place them, skin side up, in a large baking dish.

    Brush or spoon the honey mustard sauce all over the chicken, reserving about 2 tablespoons for later.
