- 1Set Instant Pot to Sauté. Add onion and cook 2-3 minutes until softened. Stir in garlic, cooking for 30 seconds.
- 2Press Cancel. Add chicken breasts, beans, green chiles, corn, broth, cumin, oregano, chili powder, salt, pepper, and (optional) coriander. Stir gently to combine.
- 3Lock lid and set valve to Sealing. Cook on High Pressure for 14 minutes. Allow a 10-minute natural release, then quick release remaining pressure.
- 4Carefully open lid. Remove chicken and shred with two forks. Return shredded chicken to the pot.
- 5Stir in cream cheese and sour cream until smooth and fully combined. Squeeze in lime juice. Taste and adjust seasoning as desired.
- 6Serve hot, garnished with cilantro, extra lime, avocado, or tortilla chips as desired.
