    Heat olive oil in a large soup pot over medium heat. Sauté onion, celery, and carrots (if using) for 4-5 minutes until softened.

    Add chicken thighs, chicken broth, thyme, oregano, bay leaf, turmeric, salt, and pepper. Bring to a gentle boil, then reduce heat and simmer for 15-18 minutes.
