- 1In a bowl, mix Greek yogurt, 1 tbsp olive oil, garlic, lemon zest, juice, oregano, paprika, cumin, salt, and black pepper. Add chicken and marinate for at least 20 minutes (up to 8 hours).
- 2Rinse rice under cold water. Place in a saucepan with chicken broth or water. Bring to a boil, reduce heat, cover, and simmer for 15 minutes. Turn off heat and let steam covered for 5 minutes, then fluff with a fork.
- 3Heat remaining 1 tbsp olive oil in a skillet over medium-high heat. Sear chicken for 3-4 minutes per side until golden brown and cooked through. Rest briefly, then slice.
- 4Prepare toppings: halve tomatoes, dice cucumber, slice red onion, pit and halve olives, crumble feta, and chop parsley.
- 5Assemble bowls by layering rice, chicken, and toppings. Add a generous spoonful of hummus, sprinkle with feta and parsley, and garnish with olive oil and lemon wedges.
