    In a bowl, mix Greek yogurt, 1 tbsp olive oil, garlic, lemon zest, juice, oregano, paprika, cumin, salt, and black pepper. Add chicken and marinate for at least 20 minutes (up to 8 hours).

    Rinse rice under cold water. Place in a saucepan with chicken broth or water. Bring to a boil, reduce heat, cover, and simmer for 15 minutes. Turn off heat and let steam covered for 5 minutes, then fluff with a fork.
