- 3Add the grated carrots, grated apple, coconut, raisins, and walnuts to the dry ingredients. Stir to combine.
- 4In a separate bowl, whisk together the eggs, oil, orange juice, and vanilla extract until well blended.
- 5Pour the wet mixture into the dry ingredients. Fold gently with a spatula, mixing just until combined—do not over-mix.
- 6Divide batter evenly among the muffin cups, filling each about 3/4 full.
- 7Bake for 22-25 minutes, or until a toothpick inserted comes out clean.
