- 1Pat chicken breasts dry and season both sides with salt, pepper, and Italian seasoning.
- 2Heat olive oil in a large skillet over medium-high. Sear chicken for 4–5 minutes per side, until golden and cooked through. Set aside.
- 3Lower heat to medium and add butter. Sauté garlic for 30 seconds until fragrant.
- 4Pour in chicken broth, scraping up brown bits. Add heavy cream, bring to a simmer, and (optional) whisk in cornstarch slurry if a thicker sauce is desired.
- 5Stir in Parmesan until melted. Add fresh basil and let it wilt.
- 6Return chicken to skillet. Top each breast with mozzarella. Cover and cook 2–4 minutes until cheese is melted.
- 7Sprinkle with extra basil and Parmesan. Serve hot, spooning cream sauce over chicken.
