- 1Preheat oven to 375°F (190°C). Line a baking sheet with foil or parchment.
- 2In a large bowl, gently mix ground beef, breadcrumbs, milk, egg, onion, garlic, parsley, Italian seasoning, Worcestershire, salt, pepper, and ketchup until just combined.
- 3Shape mixture into a rectangle on parchment paper, about 1 inch thick. Lay mozzarella strips along the center.
- 4Fold meat up and around the cheese, shaping into a loaf and making sure the cheese is sealed inside.
- 5Transfer loaf to prepared baking sheet. Lay bacon strips over the loaf, tucking ends underneath.
- 6Stir together ketchup and brown sugar for glaze, and brush over bacon (optional).
- 7Bake 50-60 minutes, or until internal temperature reaches 160°F (71°C) and bacon is browned. If desired, broil briefly to crisp bacon. Let rest 10 minutes, then slice and serve.
