- 1Preheat oven to 425°F (220°C). Position a rack in the lower third of the oven and add chicken broth to the roasting pan.
- 2In a bowl, mix together butter, fresh herbs, garlic, lemon zest, salt, pepper, and paprika until smooth.
- 3Pat turkey breast dry with paper towels. Loosen the skin and spread half the herbed butter underneath; spread the rest on top of the skin.
- 4Place turkey in prepared pan, skin side up. Roast for 15 minutes. Reduce oven temperature to 350°F (175°C) and continue roasting for 50–65 minutes, basting once or twice.
- 5When turkey reaches an internal temperature of 160°F, transfer to a cutting board. Tent with foil and rest 15–20 minutes before slicing.
