- 1Line a 12-cup muffin tin with paper liners.
- 2In a microwave-safe bowl, melt chocolate chips and coconut oil (if using) in 30-second intervals until smooth.
- 3Spoon 1 to 1.5 teaspoons of melted chocolate into the bottom of each liner and spread to coat. Freeze for 10 minutes.
- 4Mix peanut butter, melted butter, powdered sugar, and salt in a bowl until a thick dough forms.
- 5Scoop about 1 tablespoon of peanut butter mixture, roll into a ball, flatten into a disk, and place on top of each chocolate base.
- 6Cover each peanut butter layer with another 1 to 1.5 teaspoons of remaining melted chocolate. Smooth tops and tap the pan gently.
- 7Sprinkle with flaky sea salt if desired. Refrigerate or freeze for 30 minutes or until set. Peel off paper liners and enjoy!
