- 1In a bowl, whisk together eggs, Parmesan cheese, and black pepper until smooth; set aside.
- 2Heat a large skillet over medium heat. Cook chopped bacon until crispy, about 5-7 minutes. Add minced garlic and sauté for 30 seconds. Remove skillet from heat.
- 3Bring a pot of water to a boil. Add ramen noodles (without seasoning packets) and cook for 2-3 minutes, until just tender. Drain, saving 1/2 cup of noodle water.
- 4Immediately transfer hot noodles to the skillet with bacon and garlic. Add butter and toss to melt.
- 5While noodles are very hot, pour in the egg-cheese mixture, stirring quickly and constantly to create a creamy sauce (not scrambled eggs). Add a little reserved noodle water as needed.
- 6Taste for seasoning. Serve immediately with extra Parmesan and green onions if desired.
