- 1Trim any excess fat from chicken thighs and pat dry. Slice onion and mince garlic.
- 2Place sliced onion in the bottom of the slow cooker. Arrange chicken thighs evenly on top.
- 3In a bowl, mix barbecue sauce, brown sugar, smoked paprika, minced garlic, salt, pepper, and apple cider vinegar.
- 4Pour sauce mixture over chicken, spreading to coat all pieces.
- 5Cover and cook on low for 5 hours or high for 2 1/2 to 3 hours, until the chicken is tender.
- 6For thicker sauce, uncover and cook an additional 15-20 minutes. Garnish with fresh parsley or green onion before serving.
