    Trim any excess fat from chicken thighs and pat dry. Slice onion and mince garlic.

    Place sliced onion in the bottom of the slow cooker. Arrange chicken thighs evenly on top.

    In a bowl, mix barbecue sauce, brown sugar, smoked paprika, minced garlic, salt, pepper, and apple cider vinegar.

    Pour sauce mixture over chicken, spreading to coat all pieces.

    Cover and cook on low for 5 hours or high for 2 1/2 to 3 hours, until the chicken is tender.

    For thicker sauce, uncover and cook an additional 15-20 minutes. Garnish with fresh parsley or green onion before serving.
