- 1Pat chicken thighs dry and rub with olive oil. Season with paprika, thyme, rosemary, salt, and black pepper.
- 2Place sliced onion and minced garlic in the bottom of your slow cooker.
- 3Arrange chicken thighs on top of onions and garlic.
- 4In a small bowl, whisk together chicken broth, soy sauce, and brown sugar. Pour mixture over chicken.
- 5Cover and cook on LOW for 4-5 hours (or HIGH for 2.5-3 hours), until chicken is very tender.
- 6For a thicker sauce, mix cornstarch and water to create a slurry. Stir into the slow cooker for the last 20-30 minutes.
- 7Garnish with freshly chopped parsley and serve hot.
