    Pat chicken thighs dry and rub with olive oil. Season with paprika, thyme, rosemary, salt, and black pepper.

    Place sliced onion and minced garlic in the bottom of your slow cooker.

    Arrange chicken thighs on top of onions and garlic.

    In a small bowl, whisk together chicken broth, soy sauce, and brown sugar. Pour mixture over chicken.

    Cover and cook on LOW for 4-5 hours (or HIGH for 2.5-3 hours), until chicken is very tender.

    For a thicker sauce, mix cornstarch and water to create a slurry. Stir into the slow cooker for the last 20-30 minutes.
