- 1Preheat oven to 350°F (175°C) and line two large baking sheets with parchment paper.
- 2In a medium bowl, whisk together flour, ginger, baking soda, cinnamon, cloves, and salt.
- 3In a large bowl, beat the softened butter and brown sugar with a mixer until light and fluffy, about 2-3 minutes.
- 4Add the egg and molasses to the butter mixture, beating until well blended.
- 5Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
- 6Scoop tablespoon-sized portions of dough and roll into balls. Roll each ball in granulated sugar to coat.
- 7Place dough balls 2 inches apart on prepared baking sheets. Bake for 9-11 minutes, until edges are set and tops begin to crack.
- 8Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
