- 1Bring a large pot of salted water to a boil and cook penne pasta until al dente (10-11 minutes). Drain and set aside, reserving 1/2 cup of pasta water.
- 2While pasta cooks, heat 1 tablespoon olive oil in a large skillet over medium-high. Add chicken, season with 1/2 teaspoon salt, 1/4 teaspoon pepper, and smoked paprika. Sauté until chicken is golden and cooked through, about 5-6 minutes. Transfer to a plate.
- 3Add remaining oil to pan. Sauté onion and red bell pepper until soft and lightly caramelized, 3-4 minutes. Stir in garlic and red pepper flakes; cook another 1 minute.
- 4Add drained diced tomatoes; cook 2 minutes. Reduce heat to low. Pour in heavy cream and stir in Parmesan. Simmer 3-4 minutes, stirring, until cream sauce thickens.
- 5Return chicken to skillet along with cooked pasta. Toss well to evenly coat, adding a splash of reserved pasta water if needed. Taste and adjust spice or seasoning. Serve hot, topped with extra Parmesan, parsley, and chili flakes as desired.
