- 1In a bowl, toss peeled and deveined shrimp with olive oil, chili powder, smoked paprika, cumin, garlic powder, cayenne (if using), 1/2 teaspoon salt, and black pepper until evenly coated.
- 2In a blender, combine avocado, sour cream or Greek yogurt, 1 tablespoon of lime juice, 1/4 cup cilantro, and a pinch of salt. Blend until smooth and creamy, adjusting seasoning as needed.
- 3In a separate bowl, toss the shredded cabbage with remaining lime juice and a 1/4 teaspoon salt; set aside for a simple slaw.
- 4Heat a large skillet over medium-high heat. Cook the seasoned shrimp for 2–3 minutes per side, or until just pink and opaque. Remove from heat.
- 5Warm tortillas in a dry skillet or over an open flame, about 30 seconds per side. Keep them wrapped in a clean towel until serving.
