Instructions
- 1Preheat oven to 350°F. Line an 8-inch square pan with parchment and lightly grease.
- 2Puree 1 lb strawberries. Simmer with lemon juice and optional sugar over medium heat, stirring, until reduced to about 1/2 cup, 12 to 15 minutes. Cool completely.
- 3In a large bowl, whisk melted butter and granulated sugar until glossy. Whisk in eggs and vanilla until slightly thick.
- 4Whisk cooled strawberry reduction into the wet mixture.
- 5In a separate bowl, combine flour, baking powder, salt, and optional freeze-dried strawberry powder. Fold into the wet ingredients just until no dry streaks remain.
- 6Spread batter in the pan and bake 22 to 26 minutes, until edges are set and a toothpick near the center shows moist crumbs.
- 7Cool the pan on a rack until completely cool, about 30 minutes.
- 8Beat cream cheese and softened butter until smooth. Add powdered sugar, strawberry reduction or jam or strawberry powder, vanilla, and salt. Beat until creamy, thinning with milk as needed.
- 9Frost the cooled brownies, garnish with sliced strawberries, chill 20 minutes for cleaner slices, then cut into 16 squares and serve.
