    Preheat oven to 350°F (175°C). Grease and line two 8-inch cake pans (or one 9x13-inch pan) with parchment paper.

    In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt.

    In another bowl, whisk together almond milk, oil, vanilla, and apple cider vinegar.

    Add wet ingredients to dry, stirring gently. Dissolve instant coffee in hot water and pour into the batter. Mix until just combined.

    Divide batter evenly into prepared pans. Bake for 28–32 minutes (8-inch pans) or 34–37 minutes (9x13-inch), until a toothpick comes out mostly clean.

    Remove cakes and cool in pans for 10 minutes, then turn onto a wire rack to cool completely.
