- 1Heat olive oil in a large pot over medium heat. Add sausage, breaking it apart with a wooden spoon, and cook until browned, about 5-6 minutes. Remove sausage and set aside.
- 2In the same pot, add diced onion and cook until soft, about 3-4 minutes. Stir in garlic, Italian herbs, and red pepper flakes (if using); cook for 1 minute until fragrant.
- 3Add cubed potatoes, chicken broth, and water to the pot. Scrape up any browned bits from the bottom. Bring to a boil, then lower heat and simmer for 10-12 minutes until potatoes are just tender.
- 4Return sausage to the pot along with chopped kale. Simmer for an additional 2-3 minutes until the kale is wilted.
- 5Lower heat and stir in the heavy cream. Heat gently until warmed through (don’t boil). Taste and add salt and pepper as needed.
