    Cook the brown rice according to package instructions and set aside.

    In a large skillet, heat olive oil over medium heat. Sauté onion for 3 minutes, then add garlic.

    Stir in sliced bell peppers, cumin, smoked paprika, salt, and pepper. Sauté for 5-6 minutes until just tender.

    Add black beans and corn to the skillet. Cook for 2-3 more minutes, stirring occasionally, until heated through.

    In a small bowl, mash avocados with lime juice and a pinch of salt.

    Warm tortillas using a dry skillet or microwave as described above.

    Assemble each burrito with a layer of mashed avocado, a scoop of rice, bean-veggie mix, salsa, cilantro, and any extras.
