- 1Peel and cut sweet potatoes into 1-inch cubes.
- 2Place potatoes in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil over high heat.
- 3Reduce heat to medium and simmer for 15-20 minutes, until potatoes are fork-tender.
- 4Drain the potatoes and return them to the pot. Let them sit uncovered for 2 minutes to allow steam to escape.
- 5Add butter and mash potatoes until mostly smooth, using a potato masher or electric mixer.
- 6Pour in milk gradually, mashing and stirring until you reach a creamy consistency.
- 7Stir in chopped chipotle peppers, adobo sauce, lime juice, salt, and black pepper. Taste and adjust seasoning as needed.
- 8Transfer to a serving bowl, garnish with fresh cilantro, and serve hot.
