- 1Bring a large pot of salted water to a boil. Add rotini pasta and cook for 8-10 minutes, until al dente. Drain and rinse under cold water.
- 2While the pasta cooks, chop the cherry tomatoes, cucumber, bell peppers, red onion, olives, cheese, parsley, and salami (if using).
- 3In a small bowl or jar, whisk together olive oil, red wine vinegar, Dijon mustard, Italian herbs, garlic powder, salt, and pepper for the dressing.
- 4In a large mixing bowl, combine cooled pasta, veggies, cheese, olives, and salami.
- 5Pour the dressing over the salad and toss until everything is well coated.
- 6Refrigerate the salad for at least 30 minutes, then toss again, garnish with fresh parsley or basil, and serve chilled.
