- 1Preheat oven to 350°F (175°C) and grease a 9x9-inch baking dish.
- 2In a large mixing bowl, whisk together melted butter, sour cream, and eggs until smooth.
- 3Stir in the whole kernel corn, cream-style corn, 1 cup cheddar cheese, salt, and pepper until well combined.
- 4Fold in the corn muffin mix and gently combine, careful not to overmix.
- 5Pour batter into prepared baking dish. Top evenly with remaining 1/2 cup cheddar cheese.
- 6Bake for 35–40 minutes, until golden brown and the center is set.
